This sweet and savory summer salad comes together in just a few minutes. Briny feta is a delicious companion to sweet and juicy watermelon, while fresh mint adds delicate brightness and jalapeño just the right amount of heat.

Serves about 6
  • 6 cups cubed watermelon
  • 4 ounces diced feta
  • 1 jalapeño, sliced thin
  • 1/2 medium red onion, sliced thin
  • 1/2 cup chopped fresh mint
  • 1/4 cup extra-virgin olive oil
  • 1 lime, juiced
  • Fine sea salt, to taste
In a large bowl, combine the watermelon, feta, jalapeño, onion, and mint, and toss gently to mix. Drizzle with olive oil and lime juice. Season with sea salt as needed and serve.

Store leftovers in a tightly sealed container in the fridge for up to 1 day.
