Plenty of “beefy” stews exist out there, so this is far from ground-breaking material, but trust me: this is the last recipe you'll ever need. Simply prepared, easily frozen and saved for later, and of course, that complex, intensely savory flavor that can only come from layers of quality ingredients, care, and time. This is what comfort tastes like, steamy enough to cut through any deep chill.

10. Sauerkraut and Potato Focaccia

Magical things happen when you top a chewy loaf of focaccia with thin slices of golden-fleshed potatoes and a handful of red onions. Crispy and golden brown around the edges but still tender on the inside, the sheath of potatoes creates a topper that sets an otherwise simple flat bread apart from the rest.  Sauerkraut brightens up the flavors of the wheat with a much-needed hit of acid, those tangy notes perfectly in tune with the heartier starches.

Speckled with walnuts, raisins, and of course orange flecks of carrot, this new take on carrot cake is certainly a mouthful, but it’s not at all hard to swallow. One might even feel slightly virtuous selecting a slice or two for breakfast, since you’re getting a nice serving of carrot, right?

Inspired by saag paneer, and Indian dish with gently stewed spinach and cubes of soft cheese, this vegan version utilizes kale, the leafy green of the moment, and achieves a silkier texture through the use of pureed potato. A stunning one-bowl meal, complete with greens and protein, not to mention a crave-worthy spicy flavor profile.
