Rolled in sesame seeds and spiked with spiced rum and nutmeg, these little whole-grain spelt thumbprint cookies are excellent served with a mug of dark, inky black tea or tucked away in tins to give to friends for the holidays.
Makes about 2 dozen cookies
- 1 1/4 cups sprouted spelt flour
- 2 tablespoons arrowroot starch
- 1 teaspoon baking powder
- 1/4 teaspoon fine sea salt
- 1/2 teaspoon finely grated nutmeg
- 1/2 cup unrefined cane sugar, such as rapadura or panela
- 1/2 cup salted butter
- 1 egg yolk
- 1 tablespoon sour cream
- 1 teaspoon spiced rum
- 1/2 cup sesame seeds
- 6 tablespoons jam or preserves
