In food processor, finely chop celery, onion, and parsley. In a large frying pan, sauté chopped items in olive oil on low heat for 10–15 minutes, stirring occasionally.

In separate frying pan, cook ground beef; make sure all fat is drained off. If cooking sausage, take sausage out of casing and cook. After cooking, drain and put in food processor for 30 seconds.

Add spaghetti sauce, cilantro, crushed tomatoes, bay leaf, peperoncini, broth, salt, pepper, and meat to celery and onion mixture. Bring to a boil. Turn down heat and simmer for 15–20 minutes, adding more broth if too thick.

Add pasta for the last 5 minutes.

Serve with cheese.
