This pudding is gluten and dairy free, but sure to please. This pudding makes a great guilt free dessert, even for those with diabetes. Chia seeds are high in fibre and protein.

Prep time: 3 minutes
Total time: 5 minutes (plus overnight refrigeration)
Ingredients:
1 1/2 cup vanilla almond milk
1/3 cup chia seeds
1 1/2 tbsp honey
1/4 cup blueberries, chopped
Directions:
1. Wash and chop the blueberries. In a bowl add milk, honey and blueberries. Mix the ingredients together.
2. Add in the chia seeds and mix well. Cover and place in the fridge overnight.
