La Mar was one of the restaurants chosen to serve some of the top culinary talent in the world, the finalists of the Specialty Food Association’s sofi Awards, at New York City’s Javits Center earlier this month. The Epoch Times visited La Mar and asked the restaurant to recreate what its chef served.

La Mar Cebichería focuses on Peruvian-style seafood, in particular cebiche, Latin America’s marinated variant of sushi. While La Mar has a diversity of cebiches on the menu, executive chef Victoriano López decided to serve cebiche clasico, an exquisite rendition of the most traditional version of the dish.

Cebiche clasico is made with sashimi-grade fluke in a classic leche de tigre—translated as “tiger’s milk,” a lime-juice-and-habanero-marinade—served with red onions, sweet potato and Peruvian corn.
