Trattoria Bianca opened last week near Penn Station. The project is led by Michael Whiteman, president of the company that worked on the Rainbow Room and Windows on the World.

Chef Julian Clauss-Ehlers has worked in Michelin-starred restaurants in England and continental Europe, including La Côte St. Jacques and Les Prés d'Eugénie. Italian cuisine is the one he loves best.

The menu features classics like veal saltimbocca, tagliatelle Bolognese, Barolo-braised lamb shanks on polenta, as well as contemporary takes like roasted beet Carpaccio with goat cheese, fennel, and pistachios; frisee salad with pork belly, poached eggs, and fried oysters; and squid ink spaghetti with shrimp.

The setting is relaxed. As the name suggest, Trattoria Bianca, designed by architect Richard Bloch, is mostly white. A collection of Italian art deco food and travel posters provide contrast.
An extensive list of cocktails is offered, including five variations of Negroni.
