This dessert is easy to prepare in a blender and only requires a few ingredients. Its presentation is enhanced with optional garnishes, or any strawberry or caramel sauce you happen to have on hand waiting for an occasion to be used.
It’s a refreshing treat, and just right for a card game or book club gathering, patio party, or a lunch or dinner dessert for four or five people.
Lite Strawberry Gelatin Dessert
125 ml (1/2 cup) strawberries
50 ml (1/4 cup) fresh basil or mint (optional)
175 ml (3/4 cup) boiling water
1 pkg (3 oz) sugar-free strawberry or strawberry-banana gelatin
125 ml (1/2 cup) cold water
Ice cubes
125 ml (1/2 cup) lite whipped cream topping, thawed
5 small strawberries for garnish
Whipped cream topping (optional garnish)
Small basil or mint leaves (optional garnish)
Strawberry or caramel sauce (optional garnish)
Step 1: Wash, pat dry, and hull strawberries. Wash basil or mint, and pat dry.
Step 2: Boil water. In a medium bowl, add water and gelatin; stir until entirely dissolved (2 minutes). Place in a blender and blend for 30 seconds.
Step 3: Pour the cold water into a measuring cup and add ice until it reaches 300 ml (1 1/4 cups); add to blender and blend for 30 seconds. Add strawberries, basil or mint, and whipped cream topping, and blend well.
Step 4: Pour into dessert dishes and cool in refrigerator for at least 30 minutes or until set.
Step 5: Before serving, garnish with strawberries and any of the optional ingredients.
