Recipe: Cucumber-Feta Toast (Video)

Cool, fresh, crisp cucumbers combined with tangy feta cheese and lemon juice on a baguette make a great snack or a perfect start to a light yet satisfying dinner.

Ingredients

  • 1/2 baguette
  • 2 teaspoons plus 4 teaspoons extra-virgin olive oil
  • 3 ounces feta
  • 1/2 teaspoon fresh lemon juice
  • Coarse salt and ground pepper
  • 1 small English cucumber, thinly sliced crosswise

Method: 

1. Start by slicing half of the baguette length wise, and then brush it with some olive oil (a couple of teaspoons). Then sprinkle the baguette with a pinch of salt.

2. Preheat your oven to 450 degrees, because you are going to toast your baguette in the oven. 

3. Next, place the baguette on the baking sheet and put them on the 450 degree oven for about 5 minutes, till they are golden brown and shiny. 

4. For the topping, you can use 3 ounces of feta cheese , add about 4 teaspoons of olive oil to that, and just a little bit of lemon. Then, mash all this up as it will help the cucumber to stay on the sandwich. 

5. Then add a pinch of salt, and pepper to the topping. 

6. Next, slice up the cucumber in a nice and thin way so that it doesn’t fall of the sandwich. 

7. Spread some feta cheese on the baguette and place the cucumber slice on it.

8. Finally, add a drizzle of oil and cut into pieces to serve.
