Have you ever wondered how to make super-healthy frozen cheesecake cubes or popsicles? Well even if you haven’t, you might still want to check out these recipes. Both are easy to make as a family. These recipes requires lots of adding of ingredients, stirring and tasting moments kids can help you with. If you use raw milk based ingredients the cheesecake cubes will even work as natural probiotics (strengthening your internal microclimate). Vegetarians (like myself) may appreciate the fact that this cheesecake requires no animal-derived gelatin... 

Ingredients:

Cubes:
1 cup of sour cream
1 cup of whipping cream
3/4 cups of kefir cheese (or cream cheese)
1/2 cup raw honey or a bit less
1/8 teaspoon unrefined sea salt

Sauce:
1/4 cup raw honey
1/4 filtered water
1 cup fresh or frozen blueberries

7-step directions: 

  1. Use a mixer to blend the kefir cheese (or cream cheese) and honey until smooth. 
  2. Mix in sour cream, cream, and salt until smooth again.
  3. Pour mixture into ice cube molds and put in freezer for a few hours.
  4. Heat up and simmer for a few minutes your sauce ingredients; honey, water and blueberries a few minutes before serving.
  5. Use an immersion blender to make the sauce smooth. 
  6. Serve your ice cubes on small plates doused with (heated) blueberry sauce.

Makes about 4 cups of cheesecake cubes.

Flavor/Popsicle Variation:

Add 1/2 teaspoon of vanilla or 1/4 cup of lemon juice to the recipe for a sweeter and/or fresher taste.

To make popsicles: make your cheesecake and sauce (step 1 to 6 without putting the cheescake in the freezer). Then stir the blueberry sauce through your cream cheese mixture before adding it to your popsicle molds. We use Zoku’s Mini Pops Molds at home. The pops are nice shaped and well sized for young kids, they are well tested by the kids in our neighborhood.
