Surprise family and guests with this light but stunning dessert made with pitaya, also known as dragon fruit.
Although this dessert is simple to make, it has an exotic look to it, just like the deep pink or yellow dragon fruit itself and the impressive white flowers the plant produces before the fruit forms.
Premium quality vanilla ice cream with specks of vanilla bean, or ice cream with natural ingredients is recommended.
Dragon fruit is available at most grocery stores and Asian markets.
Ice Cream With Dragon Fruit Sauce
Serves 4 to 6
Vanilla bean ice cream
4 dragon fruit, chopped, reserve 1/2 cup for sauce
For the sauce:
1/2 cup brown sugar
1/2 cup blackberries, frozen or fresh
3 tbsp butter
1/4 tsp vanilla extract
A pinch of cinnamon
Slice the fruit lengthwise and peel back the outer casing. Chop the fruit into bite-sized, attractive pieces as a topping for the ice cream. In a medium-sized saucepan, mix 1/2 cup of dragon fruit with the sauce ingredients. Set on medium heat and stir until the sugar melts. Cover with a lid and cook for 10 minutes. Scoop ice cream into serving bowls and arrange fruit on top. Pour sauce over fruit. The sauce can be served warm or cold. Refrigerate any remaining sauce or fruit.
