How to Make: Super Salad

This time of year is an excellent time to start eating more greens in your diet. We'll show you what you can do to boost your salad, and a homemade dressing packed with antioxidants.

SUPER SALAD INGREDIENTS - 

SALAD:

Mixed greens
1 carrot, shredded
1/2 ripe avocado sliced
1/2 apple, sliced
a handful strawberries, halved
handful of blueberries

BLUEBERRY ACAI DRESSING:

1/4 heaping cups blueberries
1 tsp ginger powder
2 TBS acai juice
2 tbsp apple cider vinegar
1 tbsp maple syrup
a splash of water
1/4 cup extra virgin olive oil
salt + pepper

OMEGA SPRINKLES:

½ TBS sunflower seeds
½ TBS flax seeds
½ RBS chia seeds
½ TBS hemp seeds

DIRECTIONS - 

1. Mix salad ingredients in a large bowl

2. Make the dressing: Combine all of the ingredients in a blender and blend on high until you have a creamy and unified mixture. Check for seasoning and sweetness, adjust and set aside.

3. Arrange the greens. Top the greens carrots, avocado, apple, strawberries, and blueberries. Stir the dressing (it should have thickened a bit) and drizzle it all over the top and garnish the salad with the seeds sprinkle.
