Brandy Wafers
These golden, delicate wafers are a tempting holiday treat.
1 cup flour
2/3 cup sugar
1 teaspoon ginger
Dash of salt
1/2 cup molasses
1/2 cup unsalted butter
3 tablespoons brandy
Preheat oven to 300F. Mix flour, sugar, ginger, and salt. In saucepan, heat molasses just to boiling point, then add butter and stir until it melts. Slowly add flour mixture, then the brandy. Mix well. Drop pieces the size of a quarter 3 inches apart on a greased cookie sheet. You will need several cookie sheets.
Bake for 10 or 12 minutes. Cool for a minute, then remove with a spatula and, if you wish, roll around the handle of a wooden spoon to form tubes. If too brittle, return to oven for a minute Repeat until dough is used, removing crumbs and excess grease with a paper towel each time.
