NEW YORK—Daniel’s former head mixologist Xavier Herit is opening his own bar, Wallflower, in the West Village in October. The opening date has been pushed back tentatively to Oct. 10, Herit told Epoch Times. Fingers are crossed.
Herit promises the bar, on 235 West 12th Street, will be unpretentious.
It will serve mostly French food, such as raw-bar selections, charcuterie, and scallops with seaweed and vin blanc. The menu is overseen by Jared Stafford-Hill; he and Herit both used to work for Alain Ducasse.
Wallflower’s drinks menu includes a seasonal cocktail menu with lovely items such as the Betty Draper (Citadelle gin, calvados, Manzanilla sherry, celery and lime juices, apple syrup, and apple bitters) and the She Sho (shochu, Oloroso sherry, lime juice, carrot-ginger syrup, and Virgil’s root beer).
