NEW YORK— Ricardo Cardona was once the personal chef for Marc Anthony, Jennifer Lopez, and the New York Yankees. But now he is creating dishes for customers at Z BAR Restaurant & Sky-Lounge, a Euro-Latino rooftop restaurant that opened in Hell’s Kitchen late October.
Cardona has crafted an innovative menu that consists of a fusion of traditional and exotic flavors. His famous dishes include the Lobster Ceviche, Spicy Shrimp Tacos and Pumpkin Seed Crusted Scottish Salmon.
Entrees include Seared Chilean Seabass, made with Asparagus Risotto, Poached Lobster, Achiote Americaine Sauce ($32); Long Island Duck Breast, made with Batata Mash, Ancho Chili Wild Berries Au Jus ($24).
The restaurant also serves nice Salad Bowls such as the Midtown Salad, Smoked Apple Wood Bacon, Cabrales Blue Cheese, Grape Tomato, Crispy Poached Egg, Avocado, Buttermilk Ranch Dressing ($14); and the Burrata, made with Charred Baguette, Vegetable Tart, Upland Cress, Balsamic Reduction, Basil Oil ($16).
Mixologist Nelson Lemus is stirring cocktails behind the bar, infusing Latin liquors and seasonal ingredients. Cocktails include “The Bossa Nova,” made with Leblon Cachaca, Cashew Nectar, Fresh Lime Juice and Infused Syrup ($14); “Mr. Mark,” made with Hennessy V.S, Grand Marnier, Spiced Pomegranate Tea, Fresh Lemon Juice, Infused Syrup and Orange Bitters ($14).
