Ingredients:
Crust
- 1 Cup Almonds
- 1 Cup Pecans
- 1 Cup shredded Coconut
- 3 pitted Dates
- 1 teaspoon Coconut Butter
- 1 pinch of Celtic Sea Salt
Filling
- 3 Cups Strawberries
- 3-5 Bananas
- 3 Tablespoons Honey
- 1 Tablespoon Coconut Butter
- 3 Tablespoon Psyllium, to thicken
Cranberry Puree
- 1 Cup Cranberries
- 3 Tablespoon Honey
Steps/Methods:
Process crust ingredients until crumbly in the food processor. Form into a ball and press into pie plate.Blend all the filling ingredients and pour into pie crust. Chill until firm.
Blend cranberries and honey until smooth. Pour over the pie.
Garnish the pie with cranberries, pomegranate seeds and flowers. This pie will last for one week in the fridge or 2 weeks in the freezer if covered well. Let stand 10 minutes before slicing and serving. In-Joy!
