We love cooking and baking with coconut oil because of its many health-promoting properties. Coconut oil is that star of this recipe! Here are some benefits coconut oil:

  • Balances blood sugar

  • Benefits cardiovascular health

  • Aids digestion

  • Promotes liver health

  • Boosts good cholesterol

  • Has anti-aging and antioxidant properties

  • Boosts energy

  • Helps with weight loss

I first made this fudge around the holidays in an effort to provide treats that benefitted the health of my family. This fudge is decadent, easy to prepare, and full of healthy fats to nourish the body. Of course, the holidays aren’t the only time to endulge in this fudge, but it is a great time to start!

Ingredients

1 cup coconut oil (I buy in bulk to save money)

1 cup almond butter, cashew butter, or peanut butter

1 cup cacao

1/2 cup raw honey, maple syrup, or monk fruit syrup*

1/4 teaspoon salt

Method

Prepare an 8x8 baking dish by lining it with unbleached parchment paper or lightly greasing with coconut oil. Place the coconut oil, nut butter into a saucepan and melt over low heat. Once melted, stir in the cacao, sweetener, and salt and stir until well combined. Pour the mixture into the prepared 8x8 baking dish transfer to the refrigerator to set up, about 2 hours. Cut into bite-sized squares. Please note that coconut oil will melt at 76 degrees, so keep the fudge away from heat.

*For those abiding by a ketogenic diet, use the monk fruit sweetener.
