Creamy Zucchini Noodles Recipe

Zucchini noodles are a great way to enjoy a pasta dish that packs more of a nutritional punch than a standard noodle. Zucchini also cooks in a flash, so this meal takes no time at all to whip up. Adding butter gives you the creamy texture and buttery flavor with no GMOs, trans fats, and a nutritional boost from healthy fats.

Ingredients

1 tablespoon grass-fed butter 3 medium zucchini, cut into noodles using a spiralizer, vegetable peeler, or julienned 4 cloves garlic, minced 1 tablespoon lemon juice 1/4 cup freshly grated Parmesan cheese Fresh mint Salt and pepper to taste

Directions

Heat butter in a large pan over medium heat until just melted. Add in garlic and sauté until fragrant (under a minute). Add zucchini noodles and toss until coated. Cook for 2-3 minutes or until tender but still crisp. Top with lemon juice, Parmesan cheese, and fresh mint, tossing again to coat.
