Raising Cane’s Opens First South Bay Location

The Louisiana-based fried chicken restaurant, Raising Cane’s, opened its first South Bay location on 2394 Evergreen Pl, San Jose, on Tuesday, April 1.
Known for its chicken fingers and house-made Cane’s sauce, Raising Cane’s has aggressively expanded in the Bay Area since the opening of its first Bay Area location in Oakland in 2022.

Having since opened locations in Colma, Hayward, Vacaville, and Fairfield, the new location in East San Jose’s Evergreen Circle Shopping Center is the restaurant’s sixth Bay Area site.

The Raising Cane’s is open from 9 a.m. to 2 a.m. on Sunday through Wednesday, and 9 a.m to 3:30 a.m. on Thursday through Friday.
A couple days after the grand opening, the new Cane’s had a drive-through line that was nearly extended onto the main road. With so many customers in line, security guards were managing the cars at the shopping center’s entrance.

San Jose Mayor Matt Mahan shared a video on Facebook of himself ordering a meal and eating chicken fingers at the restaurant, a day before its grand opening.
“See you at the brand new Raising Cane’s?” he said in the caption. “The new location is the only place to grab the Caniac Combo in San Jose—the next stop is 30 miles away!”
San Jose District 8 Council Member Domingo Candelas also shared a video at the Raising Cane’s on Facebook, which featured the new location’s ribbon cutting. 
“Not even the rain could stop people from lining up and having delicious chicken fingers,” he said in the video. “I’m so excited to, not just eat here, but have another business opening up in my district … We look forward to enjoying your chicken fingers as a team and as a community.”
After opening 118 new restaurants last year, Raising Cane’s is now in 43 states with over 800 locations, according to ScrapeHero data; 108 of these restaurants are in California alone.
Raising Cane’s is set to open two Southern California locations in the next month, in Perris and Yucaipa. It is also planning on opening a location in Stonestown Galleria, a San Francisco shopping mall, in 2026.
