Fruity-Nutty Salad Recipe

It’s hard to go wrong when you cook with fruits, vegetables and whole grains. You don’t need to worry about precise measurements or ingredient preparation. The recipes give you general guidelines, but if you do things a little differently, chances are your fruit salad will still be delicious!

4-6 servings

Ingredients

2 oranges or 6 tangerines or clementines, peeled and cut in bite-size pieces 2 tart apples, cut in bite-size chunks 1 bell pepper, chopped 1 stalk celery, chopped 1 bunch green onions, sliced (white part) 1/2 cup chopped dried apricots 2 cups cooked, chilled wild rice juice of 1 lemon 1/2 teaspoon cinnamon 1/2 cup mayonnaise 1/2 cup chopped pecans, cashews or other nuts of your choice

Combine all ingredients.

Note:  This recipe can be used with virtually any fresh fruit or combination of fresh and dried fruits.  Take advantage of whatever fruits are in season or what you have on hand.
