Easy 4-Ingredient Superfood Chia Pudding (RECIPE +Video)

These chia pudding recipes are made with healthy, simple ingredients. Amazing flavors can be created with easy additions. They are loaded with omega 3 fatty acids, protein, antioxidants and fiber, and a great superfood breakfast!

Ingredients:
Chia Pudding base:
  • 1/2 cup Chia seeds 
  • 2 cup Coconut milk (or milk of your choice)
  • 4 tsp. Maple syrup or other natural sweetener
  • 2 tsp. Vanilla extract
  • Chia Pudding chocolate base:
  • 1/2 cup Chia seeds 
  • 2 cup Coconut milk (or milk of your choice)
  • 3 tbsp. Cacao powder
  • Toppings:
  • Berries, Mango, Pineapple, Peaches, Banana, Kiwi, Cherries, Oranges
  • Dried fruit
  • Cinnamon powder
  • Shredded coconut
  • Nuts and seeds
Directions:
  1. In a bowl or mason jar, prepare the chia seed pudding base by combining the chia seeds, almond milk, maple syrup, and vanilla extract.
  2. The chia seeds will gel together and thicken up in as little as 15 minutes, but you can let this sit overnight in the fridge for an easy make ahead breakfast.
  3. If you’re making a chocolate base, mix all the ingredients for the chocolate base.
  4. Chia pudding can be stored for up to 5 days in an airtight container in the refrigerator, so feel free to double or triple the recipe to make several jars at once.
  5. Toppings are a great way to add flavor and texture to chia pudding recipes. Feel free to play around with your favorite toppings, but here are some ideas to help get you started:
    • Fruit: Fresh fruit including berries (blueberries, raspberries, blackberries or strawberries), mango, pineapple, peaches, cherries, oranges, and kiwi are all great on top of chia pudding.
    • Shredded coconut adds a good source of fiber. Adds great texture when combined with other toppings like fresh fruit or chocolate chips.
    • Nuts and seeds: Add any of your favorite nuts for extra crunch, including almonds, walnuts, sunflower seeds, and pumpkin seeds, etc.
