It’s hard to go wrong when you cook with fruits and whole grains. You don’t need to worry about precise measurements, cooking times or ingredient preparation. The recipe below gives you general guidelines, but if you do things a little differently, chances are your dish will still be delicious!
  • 4 ripe bananas, sliced
  • 2 cups cooked brown rice, oats, barley or quinoa
  • 1/4 cup almond milk or the milk of your choice, or plain yogurt
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon dessert spice blend or cinnamon
Combine the bananas and whole grains in a microwaveable dish. If the grains are cold, microwave the mixture for a minute or two to take the chill off.

In a small bowl or cup, mix the nut milk or yogurt and vanilla extract, sprinkle the dessert spice blend or cinnamon over it and mix well, then stir it into the banana/grain mixture. Microwave on high for 3-4 minutes, or until the bananas are soft and the grains are heated through. Stir and serve.

4-6 servings

Variations: You may add raisins, currants, pieces of dried apricot or other fruits, chopped nuts, or tiny pieces of candied ginger if desired. If you wish, add a little of your favorite flavored liqueur or rum. Garnish with fresh fruits or sprinkle each serving with a little of the dessert spice blend or cinnamon.
