Creamy Cauliflower Soup Recipe

A good soup can be very healing to the body, and when combined with a nice salad or piece of fish, it makes an excellent meal. This particular soup recipe is very satisfying and works wonders in your body.

Purpose

The purpose of this soup recipe is to incorporate an oft forgotten food in cauliflower, and combine it with antibacterial, fungal, and viral foods such as onion and garlic, to create a tasty masterpiece for which your gut will thank you repeatedly. Excellent soup for the digestive system.

Equipment Required

  • Large pot
  • Good quality blender

Ingredients

  • 1 tbsp of organic extra virgin coconut oil
  • 1 large onion chopped
  • 4-6 cloves of garlic, chopped
  • 1 large head of cauliflower, cut in chunks
  • 2 tbsp of dried dill (add 3x amount if fresh)
  • 4-6 cups of water
  • Sea salt to taste

Directions

  • In large pot melt coconut oil and add dill if using dried
  • Add onion and sauté until translucent
  • Add garlic and sauté gently, being careful not to burn
  • Add cauliflower chunks, and fresh dill (if using). Cover with water
  • Simmer until tender
  • Puree in blender and return to large pot
  • Add about 4 cups of water, according to your desire of creaminess
  • Add sea salt to taste
