A video from America’s Test Kitchen shows that there’s actually a better way to cook frozen steaks.
Dan Souza, a Cook’s Illustrated editor and the guy in the video, experimented with frozen steaks as seen here:
He used eight strip loin steaks cut in half. He froze the steaks then he thawed a half of each steak in the fridge overnight.
Souza seared both sets of steaks on a hot skillet for a minute and a half on both sides before he sent them to the oven, cooking them to medium rare.
With this method, the seared steaks lost less moisture and cooked more evenly compared to thawed-out steak.
Here are the instructions:
- Have to heat a skillet filled with 1/8 an inch deep with oil
- Then sear until the steak is browned (around 90 seconds for both sides)
- Take the steak to the wire rack set in a rimmed baking sheet
- Then cook the steaks at 275 degrees F in the oven (18 - 20 minutes for 1-inch thick steaks)
