How to Make the Perfect Chocolate LEGOs

LEGOs are the building blocks to a childhood of fun. Jessie Jane shows us how to create our very own edible chocolate LEGOs by melting chocolate into a candy mold.

Step 1: Melt Chocolate

You are going to start with candy lego molds. You can find them on Amazon. Sometimes they will say “ice mold” but they’re perfectly good for chocolate. They’re just silicon molds. There are two choices for chocolate.

1. You can use candy melts. They’re good because they come colored and already tempered. You can throw these candy melts in a glass bowl in your microwave at 30-second intervals, stirring in between, and then you can pour them directly in your mold.

2. You can use regular chocolate. You‘ll want to temper your chocolate under a double boiler. It will steam it and melt it slowly. With melted white chocolate, you can add coloring. Also add two tablespoons of vegetable shortening for every 12 ounces of chocolate. You have to do this because when you add liquid to chocolate, it’ll seize up and get really hard, so adding vegetable shortening gets it back to a smooth consistency. 

Step 2: Ladle Chocolate into Molds

Once the chocolate is melted, ladle the chocolate right in to the molds. Don’t worry about it being messy. Once it’s full, take a scraper and scrape the extra mess back into your bowl. You can even fill the molds halfway, add dollops of caramel or grahame crackers, and then fill the rest with another layer of chocolate. 

Step 3: Get the Bubbles Out!

The most important step is to place the molds on a baking sheet and then rap the baking sheet repeatedly against the counter for two minutes. This is absolutely essential when using molds in order to get all the bubbles out. Otherwise your chocolate legos may come out a little deformed.

Step 4: Enjoy Chocolate Legos!

Afterwards, place the molds in the fridge. Wait 30-60 minutes. Then enjoy your chocolate legos!
