Chef Tess Ward shows you how to create a perfect Mocha Banana Bread. An exciting version of banana bread that has the right flavor, richness of the chocolate, and a kick of the expresso. Perfect for a sweet treat after dinner or to share with family.

Ingredients:

  • 180 g flour
  • 1 tbsp cocoa
  • 180 g light brown sugar
  • 50 g butter
  • 2 large eggs
  • 2 medium sized ripe bananas
  • 1 shot of espresso
  • 2 tsp baking powder
  • 1/2 tsp salt

Method:

1.  Start by preheating your oven to 180 degree celsius.

2. Next, sift the flour in a large bowl. This is to make sure that you just don’t get any lumps, and then you can sift the baking powder and cocoa. Add a pinch of salt, and keep it aside.

3. Then, beat the softened butter, eggs, and sugar together in another bowl until the mixture turns pale. It is good to have the butter on a room temperature, so that it easy to beat the butter.

4. Add some mashed bananas, vanilla, and a strong bit of coffee expresso which will give it a nice coffee mocha flavor to it. Gently mix all these ingredients, and make sure not to spill anything.

5. Then, mix the wet ingredients to the flour and avoid any lumps.

6. Pour the batter to the tin and put the cake into the oven. Allow it to cook for 40-45 minutes.

Slice and serve.
