Easy Homemade and Healthy Sweet Potato Chips
It requires a little patience to make a crunchy homemade chip. Once you get it down you will love making them and sharing them.

Every once in a while I get a hankering for a potato chip...the real kind. There is so much salt and fat in the store bought kind that I decided to experiment with creating my own. My first efforts resulted in tough, chewy chips. With a little more experimentation I came up with a yummy recipe.

There are three things I have discovered that make a difference in creating a tasty baked chip. Bake at a low temperature... for a long time ...and make sure the potato slices are as evenly cut in thickness as possible. It requires patience to make a crunchy chip. Once you get it down you will love making them and sharing them.

This is also a great kid-friendly recipe. It is one where kids can help prepare the ingredients. They will also enjoy the flavorful results. There is nothing better than engaging kids in healthy eating by having them participate in the process. 

Because I consciously manage my weight and want to foster good health, I prefer choosing sweet potatoes over white, russet potatoes. They don’t spike blood sugar and also provide a wider variety of vitamins and minerals. And you can’t beat their beautiful color. Here is my best recipe for tasty homemade healthy chips:

 Ingredients-

2 sweet potatoes

2 tablespoons olive oil

¼ teaspoon sea salt

Cooking Spray, olive oil flavored

 Directions-

1. Rinse and dry sweet potatoes

2. Cut the potatoes into thin slices, as uniformly as possible; a mandolin is preferred.

3. Toss the potatoes in a bowl with the olive oil and sprinkle with sea salt.

4. Spray a baking sheet with the cooking spray. Spread the sweet potatoes in a single layer.

5. Bake at 250 degrees for 2 hours or until the potatoes slices are crisp and browned. Flip chips once midway through for more even cooking.

6. Let cool 10 minutes. Serve promptly for best effect. They will keep for a couple of days.

Serves: 4.
